Cheesecake with Melone Mantovano PGI

Ingredients for the melon cheesecake:

  • 150 g Digestive biscuits
  • 1.5 tablespoon of instant coffee
  • 50 g butter
  • 150 g fresh cream
  • 350 g Greek yogurt
  • 25 g confectioners’ sugar
  • 10 g isinglass
  • ½ cup of milk

For the topping:

  • ½ Netted Melon PGI
  • 150 ml water
  • 45 g sugar
  • 1 tablespoon of cornstarch
  • 1 tablespoon of lemon juice
  • raspberries
  • mint
